Prep Day

Today I prepared for tomorrow – the start of my new journey/challenge/lifestyle change. While this is the millionth Sunday in my life I’ve “splurged for the last” or committed to the new diet the following day, this time needs to be different.

I measured myself, and of course was disappointed with the results. I will weigh tomorrow morning when I first wake up since tomorrow’s the official start day.

Even though my family had a famjam this evening, and I seriously indulged in the sweet and savoury treats on the table, I ate well the rest of the day.

I decided to make lunch for my parents (making enough for leftovers this coming week) and it was vegan-friendly and absolutely delicious! I made sweet potato/white bean burgers and we had a spinach salad and broccoli florets as a side. I then packaged the leftover burgers individually. I know that planning is the key to living a healthy lifestyle, so I feel like that’s one step accomplished before I even started! You can see the photos of the process of making my yummy sweet potato burgers below.
